Fajita stuffed sweet potatoes

 Ingredients 

Three medium sizes sweet potatoes 

One pepper cut into strips or chunks 

One small red onion cut into strips or chunks 

One chicken breast cut into chunks 

Cheese of choice (Syn accordingly) or use healthy A 

Fajita seasoning I used the JDSEAONS fajita season but you can use any the JDseasons is Syn free (SWGURL gets you 20% OFF) AD 

Low calorie spray 


Method 

Stab the sweet potatoes with a knife all the way around and place in the microwave for 10-15 minutes until soft, when they are soft leave them to cool then slice them down the middle. chop up the peppers, onions and chicken and add The chicken and peppers to a frying pan sprayed with low calorie spray once they start to cook add in the onions. Grab the fajita seasoning and sprinkle over the chicken, peppers and onions spraying with low calorie spray and stirring so it’s all mixed in I used over half of my fajita season so it gave it Some good flavour. once you’ve mixed it all together in the pan leave it to cook for 5-10 minutes whilst that is cooking grab a spoon and spoon out the inside of the sweet potato into a bowl carefully so the skin doesn’t break. Mash it up with a fork and add in the chicken, peppers and onions mix all together and spoon back into the potato skins. Add your cheese on top pop on to an oven tray sprayed with low calorie spray and pop into the oven for 20-25 minutes on 180.
