INGREDIENTS
Chicken and marinated
6 chicken thighs (skin removed, if your not healthy living keep that skin on)
Half a tub of 500g natural fat free greek yoghurt
2TSP paprika, mild chilli powder
1TSPdried parsley
1/2 TSP onion granules, garlic granules
Salt and pepper
Tray bake
1 red pepper
1 red onion
2 large tomatoes
Handful of cherry tomatoes
Half a courgette
fry light
Salt and pepper
METHOD
Remove your skin from your chicken thighs, in a large bowl place your chicken, yoghurt and spices mix it all together until well combined. Cover and leave to marinate for as long as you have time for (over night is best) when it comes to the cooking time chop your vegetables and spray a oven tray with fry light or any other oil place in your vegetables (apart from your tomatoes) pop your chicken on top of your vegetables and place into the oven on 200 for 40 minutes when it gets half way through add in your tomatoes (I find this better because if not they just turn to mush) and turn your chicken. please tag me on instagram @itshollyyx if you create my recipes or use the hash tag #itshollyyx for a chance to be featured.
This recipe is perfect for dinner with friends or even just a family meal its light and refreshing but packs a lovely flavour I often have mine with some boiled rice. You can even use the same marinade but cut up your chicken and cook on the BBQ.
