Cheese onion and vegetable potato cakes




Ingredients 
4 large potatoes (peeled and chopped)
1 large onion 
1 handful of peas 
1 tin of sweet corn 
120g cheese (healthy A option) 
3 cloves of garlic 


Method 
Peel and chop your potatoes and boil until mash-able, I’n the mean
Time chop up your onion pop into a frying pan and spray with low cal spray on a low heat. Once the onions start to softening add in your peas, sweet corn and chopped garlic stirring frequently. Once the potatoes are boiled drain and mash mix in your onions, peas and sweet corn. Separate your mixture into 3 bowls and add 40g of cheese into each. In each bowl you should be able to get 2 potato cakes. All together 6. 2 for your healthy A if using the right cheese. Once cooled down mould into the shape of your choice. Either pop into the oven on 180 until crisp or fry in a frying pan on a medium heat 10-15 minutes each side.
