Mash potato bake



Ingredients 
7 potatoes mashed 
4 large potatoes sliced into slices 
A whole bunch of spring onions 
2 large red onions 
5 bacon medallions 
2 large tomatoes sliced
1tsp onion granules 
1 tsp fresh parsley 
A bunch of chopped chives 
40g reduced fat cheddar cheese 
Salt and pepper 

Method 
Peel and chop up your 7 potatoes put in a pan of boiling water and boil for about 35-40 minutes. In the mean time slice your 4 large potatoes into slices ( you can leave the skin on or peel it doesn't matter i left the skin on) pop them in a separate pan and bring to the boil for about 10 minutes. Once boiled drain and set aside. When your 7 potatoes are soft enough drain and put back in the pan. With a hand blender blend the potato until creamy with no lumps.(cook your bacon saving some for the top) then Add your chopped onion, chives, spring onion, bacon, onion granules, salt and pepper give it a good mix then add into a casserole dish playing your sliced potatoes on top. Spray with fry light and season. Pop into the oven on 180 for 15-20 minutes until start to brown. Once browned take out of the oven and add your tomatoes, cheese, bacon, chives and chopped parsley on top. Put back in the oven until cheese is melted and crisp!
